01 — The Farm
Five generations farming the Hunter Hills since 1924
Hunter Hills Organics is a 210-hectare farm nestled under the Hunter Hills just off Highway One in South Canterbury, run by David Henderson — fifth generation on land the family has farmed for nearly 100 years.
Certified organic for over 25 years, the farm raises Angus beef cattle and lambs entirely free from chemicals, hormones, and synthetic inputs. The wool grown here is shorn, washed, spun, and woven right here in the South Island — nothing leaves the region until it reaches your door.
“Two hundred and ten hectares of land fed by wind, rain and sun.”
Certified Organic
BioGro certified for 25+ years. No synthetic fertilisers, pesticides, or chemicals — on the pasture or the animals.
Grass Fed
Angus beef and lamb raised on grass and forage. No grains, no hormones — leaner meat with better nutrition.
Wool Grown Here
Sheep shorn twice a year. Wool washed in Timaru, spun in Christchurch, and returned to the farm for weaving into products.
Farm Stay
The Shed & Breakfast — a self-contained rustic-chic unit on the farm sleeping up to 8. Genuine working farm experience.
02 — Organic Meat Boxes

“We have just eaten the tastiest roast leg of lamb. It’s been years since we have had a lamb that tasted that good and it was very tender too.”
— Ann & Dave, June 2022

03 — The Jersey Collection
100% NZ Romney wool jerseys — named for the pioneers of the land
Crafted from 100% organically grown, 29-micron New Zealand Romney wool. Two timeless designs, inspired by the early runholders, farmers, and pioneers whose history is woven into the land Hunter Hills sits on. Designed by David, the farmer — each jersey is a piece of living heritage.
Wool shorn from Hunter Hills sheep, washed in Timaru, spun and knitted right here in the South Island.
04 — Wool Blankets & Rugs
Woven with love — 100% organic New Zealand wool
Each piece is crafted with care and attention to detail right here on the farm by David. Sheep shorn twice a year — July and December — yielding approximately 2kg of certified organic wool per shear. The wool is washed in Timaru, spun into yarn in Christchurch, and returned to the farm ready for weaving.
