01 — The Station
5200 hectares in the heart of the Maniototo
Lammermoor Station sits in the Paerau Valley in Central Otago’s southern Maniototo — bounded by the Taieri River on one side and the Loganburn reservoir on the other. John and Susan Elliot run this extensive high country station predominantly as a sheep and beef operation, with around 300 breeding cows on the tussock land and grain crops that feed directly into the distillery.
Fine wool production has been part of Lammermoor for over 90 years — with the station producing premium Merino and Romney wool that has gone on to win champion fleece awards and supply some of New Zealand’s finest wool producers.

02 — The Distillery

Lammermoor is one of very few distilleries in New Zealand — or the world — to grow its own grain, malt, mash, ferment, distil, and mature all on the same property. There are no shortcuts and no outsourcing. The grain that grows in the paddocks of Lammermoor Station becomes the whisky that ages in barrels in the distillery next door.
It’s a truly end-to-end operation — and the character of the Central Otago landscape, the cold winters, the hot summers, and the clean high-country air all work their way into every bottle.
Own Grain
One of very few distilleries in NZ that grows its own grain — fed directly from the station’s crop paddocks into the distillery operation.
On-Site Maturation
Malt, mash, ferment, distil and mature — all on Lammermoor Station. The landscape and climate of Central Otago are part of every bottle.
Central Otago Character
Cold winters, hot summers, clean high-country air. The extreme climate of the Maniototo gives Lammermoor spirits a character that’s uniquely New Zealand.

Handcrafted New Zealand single malt
Lammermoor’s whisky range is small, considered, and made entirely on the station. Each release reflects the season, the grain, and the cask — no two batches are identical. Aged in oak barrels on site in Central Otago’s extreme climate.

The “Gin & Bare It” range is Lammermoor’s flagship gin collection — five distinct expressions, all handcrafted and bottled on the station. From the classic Original through to the colour-changing Optical Illusion, each gin has its own personality.
