About Chopped Butchery

We’re a family-owned boutique butchery based on our farm in the beautiful hills of South Canterbury.

We specialise in nose-to-tail butchery, working with traditional heritage breeds and doing things a little differently.

Because we’re small, when you contact us, you’re talking directly to us — no middlemen, no call centres, just our family.

We process as much as possible right here on farm. Think of us as a butchery with a farm attached — full transparency from paddock to plate.

We’re transitioning to regenerative farming practices, replacing synthetic nitrogen and heavy phosphate use with natural inputs like seaweed and fish fertilisers to build healthier soil and better food.

And yes, we’re a bit old-fashioned — on purpose. We raise heritage breeds like Galloway cattle and Wiltshire sheep, not because they grow fast (they don’t), but because they produce exceptional meat, proven over centuries.

Our Pork

Our pork is 100% free range New Zealand pork, locally raised by Angela and Hamish Cotton on their 370-hectare farm just 30 minutes from our butchery.

These free range pigs are grown in a low-stress, natural environment — no concrete floors, barns or cages — just open pasture, fresh air, sunshine and green grass. The result is high-quality, locally sourced pork you can trust, produced with strong animal welfare standards and genuine farm-to-butchery traceability.

Galloway Beef – Premium, Heart-Healthy Scottish Breed

Galloway is a rare, double-coated Scottish breed known for its unique flavour and high-quality meat.

  • Lean and Healthy: Naturally low in saturated fat, Galloway beef is proven to support heart and brain health, comparable to chicken and fish.
  • Richly Marbled: Offers excellent flavour and tenderness, perfect for a premium dining experience.
  • Environmentally Responsible: Medium-sized breed reduces soil pugging and pasture damage. A non-selective grazer, Galloways thrive on rougher pasture, requiring fewer chemicals and artificial inputs.

Southdown Sheep – Historic British Breed

Southdowns are one of Britain’s oldest sheep breeds, with origins dating back to at least the 1600s in the Weald of Sussex. Their development into a premier, high-quality breed was refined by John Ellman of Glynde from 1780 onwards.
